Strawberry Banana Chia Seed Pudding

Ingredients:

1/2 cup unsweetened coconut milk

1/2 cup coconut water

1/4 cup coconut yogurt

1/2 cup sliced bananas

1/2 cup sliced strawberries

1/2 cup blueberries 

1/4 tsp vanilla extract

1/2 tsp fresh lemon juice

1/3 cup chia seeds

2 tbs coconut flakes

Instructions:

  1. Put the coconut milk, coconut water, coconut yogurt, bananas, strawberries, vanilla extract and lemon juice in the blender. Blend until smooth. 
  2. Pour the mixture into a bowl that has an airtight lid. Pour in chia seeds and whisk the mixture together until combined. Let it sit for 3 minutes and whisk again. 
  3. Place in the refrigerator with the lid on for 3-5 hours, or overnight. 
  4. When you’re ready to serve, stir in the blueberries and coconut flakes. Enjoy!
